Echo Cares is a nonprofit organization committed to improving long-term health outcomes in underserved communities through early nutrition education.


Our first initiative brings an engaging, age-appropriate health lesson directly into first-grade classrooms in underprivileged schools within our community.

Our first initiative brings an engaging, age-appropriate health lesson directly into first-grade classrooms in underprivileged schools within our community.


Each classroom visit includes:


• A live reading of Mix and Munch: Billie’s Balanced Lunch

• A personal copy of the book for every student

• A reusable four-section plate that teaches balanced eating


By combining storytelling with a practical, everyday tool, we help children visualize what a balanced meal looks like — and how to build one themselves.


Because when healthy habits begin early, they can last a lifetime.

• Type 2 diabetes, once considered an adult condition, is increasing among youth.

• Children in lower-income communities experience higher rates of diet-related health challenges.

• Research shows that early nutrition education improves long-term eating behaviors.


Many chronic diseases — including heart disease and type 2 diabetes — are strongly influenced by dietary habits established in childhood.


By teaching simple, practical tools in first grade, we aim to support long-term health outcomes and reduce preventable disease later in life.
